Walking Fun

The other night we went on our nightly walk since the weather was cooperating. We usually take the wagon and pull Ashlyn and Audree (part of the way before she jumps out). Well Ashlyn decided she was going to jump out of the wagon this time. She did everything big sister did and even wanted to pull her in the wagon. She was WORN out by the time we got home and slept like a rock lol

This is Cooper last night. He isnt rotten at all is he?

Banana Pudding Pie & Loaded Mashed Tator Casserole

I have had SEVERAL requests from people for the recipe for the items I made for this weekend. So what better way than to list them on my blog?

Loaded Mashed Potato Casserole

4-5 Lbs potatoes peeled and cut into pieces
1 Stick Butter
3/4 Cup Sour Cream
1/2 Tbsp black pepper
1/2 Tbsp salt
10 slices of bacon cooked and crumbled
Velveeta cheese
6 stalks of green onions chopped

Boil potatoes until they are nice and tender. Drain water from potatoes and return to pan. Add butter, sour cream, pepper, salt, 1/2 cup green onions and 3 strips of bacon crumbled up. Mashed all up with potatoe masher until nice and mixed.

Lightly grease a 3 quart dish. Pour mixture into dish. Top with slices of velveeta cheese (I cover the whole top), pour the rest of ther crumbled bacon on top. Bake for 20 min at 350. Pull out of oven and top with remaining green onions.

Banana Pudding Pie

1 (12-oz.) box vanilla wafers
divided 1/2 cup butter, melted
2 large bananas, sliced
Vanilla Cream Filling
4 egg whites
1/2 cup sugar

Set aside 30 vanilla wafers; pulse remaining vanilla wafers in a food processor 8 to 10 times or until coarsely crushed. (Yield should be about 2 1/2 cups.)

Stir together crushed vanilla wafers and butter until blended.

Firmly press on bottom, up sides, and onto lip of a 9-inch pieplate.

Bake at 350° for 10 to 12 minutes or until lightly browned. Remove to a wire rack, and let cool 30 minutes or until completely cool.

Arrange banana slices evenly over bottom of crust.

Prepare Vanilla Cream Filling, and spread half of hot filling over bananas;

Top with 20 vanilla wafers

Spread remaining hot filling over vanilla wafers. (Filling will be about 1/4 inch higher than top edge of crust.)

Beat egg whites at high speed with an electric mixer until foamy. Add sugar, 1 Tbsp. at a time, beating until stiff peaks form and sugar dissolves. Spread meringue evenly over hot filling, sealing the edges.

5. Bake at 350° for 10 to 12 minutes or until golden brown. Remove from oven, and let cool 1 hour on a wire rack or until completely cool.

Coarsely crush remaining 10 vanilla wafers, and sprinkle evenly over top of pie.

Chill 4 hours.

Mothers Day Weekend

Whew what a busy busy busy weekend we had this past weekend!

My cousins came down for mothers day to spend with my nana. The girls of course are just over the moon when they see their cousins. They played NON-STOP all weekend long with them, and are STILL worn out!

Saturday we celebrated Mother's Day with my grandmother and mom. My uncle cooked ribs & grilled chicken which was AMAZING! I made loaded mashed potato casserole which was sooooo yummy and banana pudding pie. My aunt made her famous baked beans, fresh green beans and oreo cherry cheesecake. Lets just say with all this food, I DEF cheated on my diet but proud to say I didn't gain ANY WEIGHT this weekend shockingly!!

Saturday afternoon Brett & I went to my cousin's wedding while the girls stayed and played. Her wedding was very pretty and the reception was tons of fun! The biggest hit was DEF the photo booth. We got in there 3 times and took silly pics lol.

My husband is Sunday I woke up to breakfast in bed! It was so sweet of my husband to do this for me. Audree came running into the room super excited to show me my present. She made me a Mothers Day card and a present at school. She was so cute when she came to show me.

The girls got me a necklace that has their names on it, which was absoutley perfect! I have wanted one of these necklaces forever and I am so glad to have one now.

Yesterday evening the hubby grilled out burgers and chicken for my stepmom and I. It was very very scrumcious!! I hope everyone had an AMAZING Mother's Day!!

And to Tiff & Zach, I know this Mother's day was special, but just think next Mother's Day you will be HOLDING the best gift of all!!

Last night after dinner, we decided we would go for a walk since it was pretty outside. The girls hopped in their wagon and off we went. We took a different route than we normally do just for different scenary lol Ashlyn rode in the wagon the whole entire time and just had a smile from ear to ear. She LOVES being outside. Audree hopped in and out of the wagon a few times, but walked most of the time with me.

After our walk, we let the girls play outside in the front yard for a bit before heading in for the night. The girls played chase, picked up leaves, rolled around, and played with Cooper! They both just smiled, and giggled and had a blast. I love being able to watch them just do their own thing and be happy.

Weekend Fun!

Saturday morning we went to Kolby's birthday party at Jump N Place! This is one of the girls FAVORITE places to go to. Its nothing but an indoor place filled with different inflatables! They will run, jump and play for hours if I let them.

After the birthday party, we headed over to my sister in laws. She lives in an apartment and their pool opened up this weekend. Audree was super excited and couldn't wait until we got there. She was a little hesitant at first with swimming, but she quickly warmed up. Ashlyn is a little fish. There was a smile just plastered on her face the entire time we were out there.

This past weekend was full of fun and laughter!
